- 1 cup cooked quinoa
- 1 cup chopped kale
- 1/2 cup diced tomatoes
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
- 2 tablespoons Super Food Spice Blend Ranch
- Juice of 1 lemon
- Salt and pepper to taste
- 1/2 cup mayo
- 1/2 cup vegan sour cream
In a large bowl, combine cooked quinoa, kale, tomatoes, cucumber, and red onion.
In a separate small bowl, whisk together Super Food Spice Blend Ranch, mayo, sour cream, lemon juice, salt, and pepper.
Pour the dressing over the quinoa salad and toss well to combine.
