Sassy Ranch mashed potatoes

Ingredients:

  • 2 lbs potatoes (Yukon gold or Russet work best)
  • 1/2 cup unsweetened almond milk (or other plant milk)
  • 1/4 cup vegan butter
  • 1 tbs sassy ranch
  • Salt and pepper, to taste
  • Chives or green onions, chopped, for garnish

Instructions:

  1. Peel (if desired) and chop potatoes into equal-sized pieces. Place them in a large pot and cover with water.
  2. Bring to a boil and cook until potatoes are fork-tender (about 15-20 minutes).
  3. Drain the potatoes and return them to the pot. Add vegan butter, almond milk, and sassy ranch.
  4. Mash until smooth and creamy, adding more plant milk as needed.
  5. Season with salt and pepper, and garnish with chopped chives or green onions.
  6. Serve warm.
