Ingredients:
- 2 lbs potatoes (Yukon gold or Russet work best)
- 1/2 cup unsweetened almond milk (or other plant milk)
- 1/4 cup vegan butter
- 1 tbs sassy ranch
- Salt and pepper, to taste
- Chives or green onions, chopped, for garnish
Instructions:
- Peel (if desired) and chop potatoes into equal-sized pieces. Place them in a large pot and cover with water.
- Bring to a boil and cook until potatoes are fork-tender (about 15-20 minutes).
- Drain the potatoes and return them to the pot. Add vegan butter, almond milk, and sassy ranch.
- Mash until smooth and creamy, adding more plant milk as needed.
- Season with salt and pepper, and garnish with chopped chives or green onions.
- Serve warm.
