Sassy Ranch Chicken Tacos

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 tablespoon olive oil
  • 2 tablespoons Sassy Ranch spice blend
  • 8 small flour tortillas (gluten free) recommend Siete brand 
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese (dairy free)
  • 1/4 cup chopped fresh cilantro
  • Sour cream (dairy free)
  • Lime wedges (optional)

Instructions:

  1. In a bowl, combine the chicken strips, olive oil, and Spice Sisters Sassy Ranch spice blend. Toss well to coat the chicken evenly. Let it marinate for at least 15 minutes.

  2. Heat a large skillet over medium-high heat. Add the marinated chicken strips and cook for about 6-8 minutes, or until the chicken is cooked through and slightly browned. Stir occasionally to ensure even cooking.

  3. While the chicken is cooking, warm the flour tortillas in a separate skillet or microwave according to the package instructions.

  4. Once the chicken is cooked, remove it from the heat and assemble the tacos. Take a warm tortilla and place a spoonful of the cooked chicken in the center. Top with shredded lettuce, diced tomatoes, diced red onion, shredded cheddar cheese, and chopped cilantro. Add a dollop of sour cream if desired.

  5. Repeat the process with the remaining tortillas and ingredients.

  6. Serve the Sassy Ranch chicken tacos immediately with lime wedges on the side for squeezing over the tacos, if desired.
